After pestering my boyfriend for years about typical French food (he is the French, not me ! :P ), he finally gave me today a wonderful book : Les 118 Recettes Françaises : Les Classiques by Trish Deseine. I was very curious about some of these recipes, so I tried something simple like the French Chocolate Pie. Since I didn’t had much time today, I cheated and used a frozen pie crust (pâte sablée).
Crust :
70g sugar
80g softened butter
3 egg yolks
180g flour
Filling :
200ml whipped cream
200g dark chocolate (I used Nestle Cooking Chocolate)
1 beaten egg
80ml milk
Preheat oven to 200°C.
In a saucepan, mix together sugar and butter very well. Add the egg yolks and finally join the flour and stir until you made a dough ball. Wrap it in plastic food wrap and refrigerate for 1 hour.
Roll out the dough on lightly floured surface and place it in a 20 cm pie pan pressing it against bottom and sides. Don’t forget to trim the crust. Prick the crust with a fork and fill it with beans or ceramic pie weights to make a unfilled pie shell (I just used another slightly smaller pie pan as weight). Bake for 10 minutes.
Take out the pie shell and reduce the temperature of the oven to 150°C.
To make the filling, put the cream in a saucepan and wait until it boils. Remove from heat and add the chocolate cut in little pieces and stir until you get a smooth cream.
Let it cool. Mix the beaten egg and the milk. Fill the pie shell and put it in the oven for 20 minutes until you see your chocolate cream is firm.

When I look at my pie, I can see I needed to trim the crust a bit more and my pie pan is slightly larger than it should be (23cm). At least it tastes good ! This is perfect for all those who love dark chocolate. :)
